Holiday Honeycrisp Salad

Ingredients
  

2 Honeycrisp apples, cored and thinly sliced

1 cup mixed greens (such as arugula, spinach, and baby kale)

1/2 cup pomegranate seeds

1/2 cup walnuts, toasted and roughly chopped

1/4 cup feta cheese, crumbled

1/4 cup red onions, thinly sliced

3 tablespoons extra virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

Instructions
 

Prepare the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined. Set aside.
