Hobo Casserole with Ground Beef & Potatoes – Quick & Delicious!

1 pound ground beef

4 medium potatoes, diced (skin on for extra flavor)

1 medium onion, chopped

2 cups green beans (fresh or frozen)

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Brown the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and chopped onions. Cook until the beef is browned, breaking it up with a spatula, about 5-7 minutes.

      Season the Mixture: Drain excess fat from the pan, then stir in garlic powder, onion powder, paprika, salt, and pepper. Cook for an additional 2 minutes to incorporate the flavors.

        Assemble the Casserole: In a large mixing bowl, combine the diced potatoes, green beans, and the cooked beef mixture. Pour in the cream of mushroom soup and mix well to ensure everything is combined evenly.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

              Add Cheese & Finish Baking: Remove the aluminum foil, sprinkle the shredded cheddar cheese over the top, and return the dish to the oven uncovered. Bake for an additional 10-15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

                Serve: Once done, let it cool for a few minutes before serving. Garnish with freshly chopped parsley if desired.
