Ingredients
  

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter (softened)

1/2 cup granulated sugar

1/4 cup brown sugar (packed)

2 large eggs

1 teaspoon vanilla extract

1/4 cup buttermilk

1/4 cup honey

1/4 cup mini chocolate chips (optional)

Powdered sugar for dusting

Instructions
 

Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it well.

    In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.

      In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.

        Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

          Alternate adding the dry ingredients and the buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix just until combined; do not overmix.

            Gently fold in the honey and mini chocolate chips, if using, until evenly distributed.

              Spoon the batter into the prepared mini muffin tin, filling each cavity about 2/3 full.

                Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into the center of a cake comes out clean.

                  Allow the cakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

                    Once cooled, dust with powdered sugar before serving.
