Ingredients
  

3 ripe bananas, mashed

1/3 cup melted coconut oil (or unsalted butter)

1/2 cup brown sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 cup all-purpose flour

1/2 cup semi-sweet chocolate chips

1/4 cup chopped walnuts or pecans (optional)

1 teaspoon ground cinnamon (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with non-stick spray.

    In a large mixing bowl, combine the melted coconut oil and brown sugar. Mix well until the sugar is fully incorporated.

      Add the mashed bananas, egg, and vanilla extract to the bowl. Whisk together until the mixture is smooth and creamy.

        Sprinkle the baking soda and salt over the wet ingredients, stirring to combine.

          Gently fold in the all-purpose flour until just incorporated (do not overmix).

            If using, add the chocolate chips, walnuts or pecans, and cinnamon. Fold until evenly distributed in the batter.

              Divide the batter evenly among the muffin cups, filling each about 2/3 full.

                Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                  Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
