1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup buttermilk

3 large eggs

1 tsp vanilla extract

1 tsp baking soda

1 tsp baking powder

½ tsp salt

2 cups whipped cream

1 cup fresh strawberries, sliced

1 cup blueberries

¼ cup toasted coconut flakes

¼ cup chopped pecans (optional)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Make the Cake Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

        Mix Dry with Wet: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.

          Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

            Prepare the Whipped Cream: While the cakes are cooling, whip the cream in a bowl until soft peaks form. Set aside.

              Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of whipped cream on top, followed by half of the sliced strawberries and blueberries. Sprinkle with a portion of the toasted coconut flakes.
