Ingredients
  

1 lb Italian sausage (mild or spicy, your choice)

2 tablespoons olive oil

1 medium yellow onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

4 cups chicken or vegetable broth

1 can (14.5 oz) diced tomatoes (with juice)

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup baby spinach

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Crusty bread (for serving)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon, and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside, leaving some drippings in the pot.

    In the same pot, add the diced onion, carrots, and celery. Sauté for 5-6 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional minute, until fragrant.

      Pour in the chicken or vegetable broth and add the can of diced tomatoes with their juice. Bring the mixture to a gentle simmer and let it cook for about 10 minutes to meld the flavors.

        Reduce the heat to low and stir in the heavy cream, oregano, basil, red pepper flakes (if using), and the cooked sausage. Season with salt and pepper to taste, and let it simmer for another 5-10 minutes.

          Just before serving, add the baby spinach to the soup and stir until wilted. Remove from heat and stir in the grated Parmesan cheese, allowing it to melt into the soup for that velvety texture.

            Serve hot, garnished with fresh parsley and additional Parmesan cheese if desired. Enjoy with slices of crusty bread for dipping!
