12 oz penne pasta

1 lb Italian sausage (sweet or spicy, casing removed)

1 medium onion, diced

3 cloves garlic, minced

4 cups fresh spinach

1 can (14 oz) diced tomatoes, drained

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish (optional)

Sauté the Sausage: In a large skillet or a deep pan, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Once browned, transfer the sausage to a plate and set aside.

    Cook the Aromatics: In the same pan, add the diced onion and cook for 3-4 minutes until translucent. Add in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Combine Ingredients: Pour in the chicken broth and bring to a low simmer. Stir in the penne pasta along with the Italian seasoning. Cook pasta according to package instructions, usually around 9-11 minutes, stirring occasionally. Ensure the pasta is al dente since it will continue cooking in the sauce.

        Add the Cream and Spinach: Once the pasta is cooked, reduce heat to low, and stir in the heavy cream, drained diced tomatoes, and cooked sausage. Slowly mix in the grated Parmesan cheese until melted and creamy.

          Incorporate Spinach: Add the fresh spinach and stir until wilted, about 2-3 minutes. Season with salt and pepper to taste.
