Ingredients

1 lb ground beef

1/2 lb ground pork

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, chopped

2 carrots, diced

2 celery stalks, diced

3 cups beef broth

1 can (14.5 oz) diced tomatoes, with juice

1 cup green beans, cut into 1-inch pieces

1 tsp Worcestershire sauce

1 bay leaf

Fresh parsley, chopped for garnish

Instructions

Prepare the Meatballs: In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well until all ingredients are combined. Shape the mixture into 1-inch meatballs and set aside.

Brown the Meatballs: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the meatballs in batches, cooking them for about 5 minutes or until browned on all sides. Remove the meatballs from the pot and set aside.

Sauté the Vegetables: In the same pot, add the chopped onions, diced carrots, and diced celery. Sauté for about 4-5 minutes until the vegetables start to soften.

Combine Ingredients: Pour in the beef broth, diced tomatoes (with juice), Worcestershire sauce, and add the bay leaf. Stir to combine.

Add Meatballs and Green Beans: Gently return the browned meatballs to the pot and add in the green beans. Bring the stew to a gentle boil, then reduce the heat to low and cover.

Simmer: Let the stew simmer for 25-30 minutes, allowing the flavors to meld and the meatballs to cook through.

Finish and Serve: Remove the bay leaf and taste for seasoning, adding more salt and pepper if needed. Garnish with freshly chopped parsley before serving. Enjoy the stew hot!
