1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, diced

3 cloves garlic, minced

1 (28 oz) can crushed tomatoes

4 cups chicken or vegetable broth

2 cups water

2 teaspoons dried basil

1 teaspoon dried oregano

1 teaspoon sugar (to balance acidity)

Salt and pepper, to taste

8 lasagna noodles, broken into pieces

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

In a large pot or Dutch oven, brown the Italian sausage over medium heat until cooked through, breaking it apart with a spatula. Remove the excess grease if necessary.

    Add the diced onion to the pot and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Pour in the crushed tomatoes, chicken broth, water, dried basil, dried oregano, sugar, and season with salt and pepper. Bring the mixture to a simmer.

        Once simmering, add the broken lasagna noodles. Cook according to the package instructions until al dente, usually around 8-10 minutes.

          In a separate bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Set aside.

            Once the noodles are cooked, remove the pot from heat and ladle the soup into bowls. Spoon a generous dollop of the ricotta mixture into each bowl, allowing it to melt slightly from the heat of the soup.

              Top each serving with the remaining mozzarella and Parmesan cheeses. Garnish with fresh basil leaves for an aroma and touch of color.
