Ingredients
  

1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

4 cups chicken or vegetable broth

2 cups heavy cream

2 cups fresh spinach, chopped

3 cups lasagna noodles, broken into pieces

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh parsley or basil for garnish

Instructions
 

In a large pot, brown the Italian sausage over medium heat until cooked through. Remove excess fat if necessary.

    Add diced onion and minced garlic to the pot. Cook until the onion is translucent, about 5 minutes.

      Stir in the diced tomatoes, broth, heavy cream, basil, oregano, salt, and pepper. Bring to a simmer.

        Add the broken lasagna noodles and cook according to the package directions, typically about 8-10 minutes, until al dente.

          Once the noodles are cooked, stir in the chopped spinach, ricotta cheese, and half of the mozzarella and Parmesan cheese.

            Allow the soup to cook for another 2-3 minutes, until the spinach wilts and the cheeses melt into the soup.

              Remove from heat and serve hot, garnished with the remaining mozzarella, Parmesan, and fresh parsley or basil.
