1 lb kielbasa sausage, sliced into rounds

4 cups russet potatoes, peeled and diced

1 medium onion, diced

2 cloves garlic, minced

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup milk

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Kielbasa: In a large skillet over medium heat, add the olive oil. Add the sliced kielbasa and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.

        Prepare Potatoes: In a large mixing bowl, combine the diced potatoes with the sautéed onion and garlic mix. Stir in the cooked kielbasa.

          Mix Cheese and Cream: In another bowl, combine sour cream, milk, paprika, thyme, salt, and pepper. Whisk until smooth. Fold in both the cheddar and mozzarella cheeses, reserving a bit of each for topping.

            Combine Ingredients: Pour the cheese mixture over the potato and kielbasa blend. Toss everything together to ensure even distribution.

              Transfer to Casserole Dish: Transfer the mixture to a greased 9x13-inch baking dish, spreading it evenly.

                Add Cheese Topping: Sprinkle the reserved cheddar and mozzarella cheese on top of the casserole.
