Ingredients
  

1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 carrot, diced

2 stalks celery, diced

1 can (14.5 oz) diced tomatoes (with juices)

1 can (15 oz) black beans, rinsed and drained

4 cups chicken broth

1 cup corn kernels (fresh, frozen, or canned)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, for garnish

Tortilla strips or chips, for serving

1 avocado, diced (optional)

Sour cream (optional)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion, bell pepper, carrot, and celery. Sauté for about 5-7 minutes, until the vegetables are tender.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the chicken breasts to the pot along with the diced tomatoes, black beans, chicken broth, corn, chili powder, cumin, smoked paprika, salt, and pepper. Bring to a boil.

        Lower the heat and let the soup simmer for about 20-25 minutes, until the chicken is cooked through.

          Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the soup.

            Stir in the lime juice and adjust the seasoning if necessary.

              Serve the soup hot, garnished with fresh cilantro, tortilla strips or chips, diced avocado, and a dollop of sour cream if desired.
