2 lbs beef chuck, cut into 1-inch pieces

4 medium carrots, diced

3 medium potatoes, diced

1 large onion, chopped

4 cloves garlic, minced

1 cup frozen peas

4 cups beef broth

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon cornstarch (optional, for thickening)

Fresh parsley for garnish (optional)

Instructions
 

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the beef chunks and sear until browned on all sides. This step enhances the flavor, so don’t skip it! Transfer the beef to the slow cooker.

    Prepare the Vegetables: In the same skillet, add the chopped onions and garlic. Sauté for 2-3 minutes until fragrant. Add the diced carrots and potatoes, cooking for an additional 5 minutes. Transfer the vegetable mix to the slow cooker with the beef.

      Add Flavoring: Pour in the beef broth, Worcestershire sauce, dried thyme, and rosemary. Season with salt and pepper to taste, stirring to combine all ingredients.

        Cook Slow: Cover the slow cooker and set it on low for 7-8 hours or high for 4-5 hours, until the beef is tender and the flavors are well blended.

          Thicken the Stew (optional): If you prefer a thicker stew, mix the cornstarch with a little water to create a slurry. Stir this into the stew during the last 30 minutes of cooking.
