2 salmon fillets (6 ounces each)

2 tablespoons olive oil

2 cloves garlic, minced

1 lemon (juice and zest)

Salt and pepper to taste

4 cups fresh spinach

1 teaspoon red pepper flakes (optional)

1 tablespoon balsamic vinegar

Fresh parsley, chopped (for garnish)

Prepare the Salmon: Pat the salmon fillets dry with a paper towel. Season both sides with salt, pepper, and half of the lemon zest.

    Heat the Oil: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
