2 cups rolled oats

1 cup almond flour (or whole wheat flour)

1/2 cup coconut oil, melted (or unsweetened applesauce for a lower-fat option)

1/4 cup honey or maple syrup

1/4 cup brown sugar (can be substituted with coconut sugar)

1/2 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup dark chocolate chips (preferably 70% cacao or higher)

1/2 cup chopped walnuts or pecans (optional)

1/4 teaspoon ground cinnamon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking soda, salt, and ground cinnamon (if using). Stir until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the melted coconut oil, honey (or maple syrup), brown sugar, and vanilla extract until smooth and the sugar dissolves slightly.

        Combine Both Mixtures: Pour the wet ingredients into the dry ingredients and stir until combined. If the mixture seems too dry, add a tablespoon of water or milk of your choice until it comes together. Fold in the dark chocolate chips and walnuts (if using).

          Spread the Mixture: Transfer the mixture to the prepared baking pan and press it down evenly with a spatula or your hands, ensuring it’s packed tightly.
