Ingredients

1 cup almond flour

1/2 cup rolled oats

1/2 teaspoon baking soda

1/4 teaspoon salt

1/3 cup coconut oil, melted

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 large egg

1/2 cup dark chocolate chips (preferably 70% cocoa or higher)

1/4 cup chopped nuts (walnuts or pecans are great options)

Optional: 1/4 teaspoon cinnamon for a warm flavor

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9-inch pie pan with coconut oil or line it with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the almond flour, rolled oats, baking soda, salt, and cinnamon (if using). Stir well to ensure all dry ingredients are evenly distributed.

Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), vanilla extract, and egg until fully emulsified.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix the dough.

Add Chocolate Chips and Nuts: Gently fold in the dark chocolate chips and chopped nuts into the dough until they are evenly distributed.

Shape the Dough: Transfer the cookie dough into the prepared pie pan. Use a spatula or your hands to spread it evenly across the bottom and up the sides of the pan to form a crust.

Bake the Pie: Place the pie in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown and the center is set but still soft.

Let Cool: Remove the pie from the oven and allow it to cool in the pan for about 10 minutes. It will firm up as it cools.

Serve: Slice the cookie pie into wedges and serve warm. Enjoy it as is or with a scoop of Greek yogurt or your favorite ice cream alternative for an extra treat!
