2 boneless, skinless chicken breasts

4 slices of low-fat Swiss cheese

4 slices of lean turkey ham

1 cup whole wheat breadcrumbs

1/2 cup Greek yogurt

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

Olive oil spray

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Place the chicken breasts between two sheets of plastic wrap and pound them gently with a meat mallet until they are about 1/2 inch thick.

      Season both sides of the chicken with salt, pepper, garlic powder, onion powder, and dried thyme.

        On each chicken breast, layer 2 slices of turkey ham and 2 slices of Swiss cheese.

          Roll the chicken breasts tightly, starting from one end to the other, and secure them with toothpicks.

            In a bowl, mix Greek yogurt and Dijon mustard to create a creamy coating.

              Dip each chicken roll into the Greek yogurt mixture, ensuring they are well coated.

                Roll the coated chicken in whole wheat breadcrumbs until fully covered. Spray lightly with olive oil spray.

                  Place the chicken rolls on a baking sheet lined with parchment paper.

                    Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the breadcrumbs are golden.

                      Remove from the oven, let rest for a few minutes, then carefully remove the toothpicks.

                        Slice the rolls into medallions and garnish with fresh parsley if desired. Serve immediately.
