4 boneless, skinless chicken thighs

2 cups fresh pineapple, cubed

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, cut into wedges

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon chili flakes (optional for heat)

Salt and pepper to taste

Fresh cilantro for garnish

Cooked rice for serving

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Chicken Marinade: In a bowl, whisk together soy sauce, honey, sesame oil, minced garlic, ground ginger, chili flakes, salt, and pepper. Set aside.

      Marinate the Chicken: Place the chicken thighs in a zip-top bag or a large bowl. Pour the marinade over the chicken, ensuring it is well-coated. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for better flavor.

        Arrange Vegetables: On the prepared sheet pan, arrange the cubed pineapple, sliced red and yellow bell peppers, and red onion in an even layer.

          Add Chicken: Remove the chicken from the marinade, letting any excess drip off. Place the marinated chicken thighs on top of the vegetables on the sheet pan.

            Bake: Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and has a nice glaze. The vegetables should be tender and slightly caramelized.

              Garnish and Serve: Once cooked, remove from the oven and garnish with fresh cilantro. Serve hot over cooked rice for a complete meal.
