3 ripe bananas, mashed

1/2 cup crushed pineapple, drained

1/2 cup granulated sugar

1/4 cup brown sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup shredded coconut

1/2 cup chopped macadamia nuts (optional)

1/2 teaspoon ground cinnamon (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

    In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

      Add the mashed bananas, crushed pineapple, eggs, and vanilla extract to the butter mixture. Mix until well combined.

        In another bowl, whisk together the baking soda, salt, flour, and ground cinnamon (if using). Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

          Fold in the shredded coconut and chopped macadamia nuts (if using) gently until evenly distributed in the batter.

            Pour the batter into the prepared loaf pan and smooth the top with a spatula.

              Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.

                Once baked, remove from the oven and let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
