4 medium-sized russet potatoes

4 tablespoons olive oil

2 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

1 teaspoon smoked paprika

Salt and pepper to taste

½ cup grated Parmesan cheese

Chopped fresh chives for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prep the Potatoes: Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.

      Slice the Potatoes: Place each potato between two chopsticks or wooden spoons to prevent cutting all the way through. Carefully make thin slices (about 1/8 inch apart) down the length of each potato, stopping when the knife hits the chopsticks, creating a fan-like structure.

        Seasoning Mixture: In a small bowl, mix together the olive oil, melted butter, minced garlic, chopped rosemary, thyme, smoked paprika, salt, and pepper.

          Apply the Mixture: Using a pastry brush, gently brush the seasoning mixture over the potatoes, ensuring it seeps into the slices as much as possible.

            Roast the Potatoes: Place the potatoes on a baking sheet lined with parchment paper. Roast in the preheated oven for 40-45 minutes or until golden and crispy, basting with the remaining oil and butter mixture halfway through.

              Add Cheese: In the last 5 minutes of cooking, sprinkle grated Parmesan cheese over the potatoes, allowing it to melt and crisp up slightly.

                Garnish and Serve: Once done, remove the potatoes from the oven. Garnish with freshly chopped chives before serving.
