1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced (button or cremini)

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

1 tablespoon all-purpose flour

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon paprika (optional)

Fresh parsley, chopped (for garnish)

8 oz egg noodles (or pasta of choice)

Instructions
 

Cook the Egg Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Season with salt, pepper, and paprika (if using). Once browned, remove the beef from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add a bit more olive oil if necessary. Add the chopped onions and sauté for about 3-4 minutes until they become translucent. Add minced garlic and sliced mushrooms, cooking until the mushrooms are tender and have released their moisture (about 5-7 minutes).

        Create the Sauce: Sprinkle the flour over the sautéed vegetables, stirring to combine. Gradually add in the beef broth, Worcestershire sauce, and Dijon mustard, stirring constantly until the mixture thickens. Bring it to a gentle simmer.

          Incorporate the Beef: Return the browned ground beef to the skillet. Reduce the heat to low and stir in the sour cream until well combined. Simmer for a few minutes to heat through. Taste and adjust seasoning if necessary.
