Grilled Peach Salad

Ingredients
  

4 ripe peaches, halved and pitted

4 cups mixed greens (arugula, spinach, and baby kale)

1/2 cup crumbled feta cheese

1/4 cup candied pecans (or walnuts)

1/2 small red onion, thinly sliced

1/4 cup balsamic glaze

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat the Grill: Heat your grill to medium-high temperature (about 400°F).

    Grill the Peaches: Brush the cut sides of the peach halves with olive oil, and sprinkle lightly with salt. Place the peaches cut-side down on the grill. Grill for about 3-4 minutes until grill marks form and they are tender but not mushy. Remove from the grill and let them cool slightly.

      Prepare the Salad Base: In a large salad bowl, combine the mixed greens and red onion slices. Toss gently to mix.

        Assemble the Salad: Once the grilled peaches are cool enough to handle, slice them into wedges.

          - Add the peach wedges on top of the mixed greens.

            - Sprinkle the salad with crumbled feta cheese and candied pecans.

              Drizzle with Dressing: Drizzle the balsamic glaze over the salad, followed by a drizzle of olive oil.

                - Season with salt and pepper to taste.

                  Garnish and Serve: Finish with fresh basil leaves scattered on top. Serve immediately while the peaches are warm!
