1.5 lbs boneless, skinless chicken thighs

2 tbsp olive oil

2 tbsp red wine vinegar

3 cloves garlic, minced

1 tbsp dried oregano

1 tsp ground cumin

1 tsp paprika

Salt and pepper, to taste

4 cups cooked quinoa or rice (for the base)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup grape or Kalamata olives, pitted and halved

1 cup crumbled feta cheese

Fresh parsley, chopped (for garnish)

Tzatziki sauce (store-bought or homemade, for serving)

Instructions
 

Marinate the Chicken: In a mixing bowl, whisk together the olive oil, red wine vinegar, minced garlic, oregano, ground cumin, paprika, salt, and pepper. Add the chicken thighs, coating them thoroughly with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.

    Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, preheat on the stovetop over medium heat.

      Grill the Chicken: Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 5-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and has grill marks. Remove from the grill and let the chicken rest for 5 minutes before slicing it into strips.

        Prepare the Bowl: In a large serving bowl or individual bowls, start with a base of cooked quinoa or rice. Layer on the grilled chicken strips.

          Add Fresh Veggies: Arrange the halved cherry tomatoes, diced cucumber, and olives around the chicken.
