4 bone-in, skin-on chicken thighs

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon sriracha (adjust to taste)

1 tablespoon fresh ginger, grated

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon black pepper

1/2 teaspoon salt

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Prepare the Marinade: In a medium bowl, whisk together soy sauce, honey, olive oil, apple cider vinegar, sriracha, grated ginger, minced garlic, smoked paprika, black pepper, and salt until well combined.

    Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using a charcoal grill, prepare a two-zone fire, with one side for direct cooking and the other for indirect cooking.

        Grill the Chicken: Remove the chicken thighs from the marinade, letting the excess drip off. Place the thighs skin-side down on the grill. Cook for about 6-7 minutes until the skin is crispy and has grill marks.
