4 slices of sourdough bread

4 slices of sharp cheddar cheese

4 slices of crispy bacon

1 large ripe tomato, sliced

1 cup fresh lettuce (such as arugula or spinach)

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

2 tablespoons unsalted butter, softened

Salt and pepper to taste

Instructions
 

Prepare the Spread: In a small bowl, mix together the mayonnaise and Dijon mustard until well combined. Set aside.

    Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and place on paper towels to drain excess grease.

      Assemble the Sandwiches: Spread a thin layer of the mayonnaise-mustard mixture on one side of each slice of sourdough bread. On the unspread side of two slices, place two slices of cheddar cheese, followed by slices of tomato, crispy bacon, and fresh lettuce. Season with salt and pepper.

        Top It Off: Place the remaining slices of cheese on top of the lettuce, and then top with the other two slices of bread (spread side up).

          Grill the Sandwiches: In the same skillet used for the bacon, melt 1 tablespoon of butter over medium heat. Carefully place the assembled sandwiches in the skillet. Cook for about 4–5 minutes per side or until the bread is golden brown and the cheese is melted. Add more butter as needed for the second side.

            Serve: Once done, remove the sandwiches from the skillet, slice in half diagonally, and serve immediately with extra tomato slices and a mixed green salad on the side, if desired. Enjoy!
