2 large chicken breasts

2 ripe avocados, halved and pitted

1 cup cherry tomatoes, halved

1/2 cup red onion, thinly sliced

1 cup spinach leaves (or your choice of greens)

4 whole wheat tortillas

1/4 cup Greek yogurt (or sour cream)

1 lime, juiced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Optional: fresh cilantro for garnish

Instructions
 

Marinate the Chicken: In a bowl, mix together olive oil, lime juice, garlic powder, cumin, salt, and pepper. Add the chicken breasts and coat them well. Let them marinate for at least 30 minutes (or up to 2 hours for more flavor).

    Grill the Chicken: Preheat your grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F). Remove from the grill and let it rest for a few minutes before slicing it into thin strips.

      Prepare Avocados: While the chicken is resting, scoop the avocado flesh into a bowl and mash it lightly with a fork. Season with salt and lime juice to taste.

        Assemble the Wraps: Lay out each tortilla on a flat surface. Spread a layer of mashed avocado over each tortilla. Place some spinach leaves on top, followed by grilled chicken strips, cherry tomatoes, and red onion slices.

          Roll the Wraps: Carefully roll up each tortilla, folding in the sides as you go, to create a tight wrap. You can secure them with toothpicks if desired.

            Grill the Wraps (Optional): For an added crispy texture, place the assembled wraps back on the grill for 2-3 minutes per side, or until golden brown and warm.

              Serve: Slice each wrap in half and serve with a dollop of Greek yogurt or sour cream on the side. Garnish with fresh cilantro if desired.
