Greek Style Grilled Fish

4 fresh fish fillets (such as sea bass or snapper)

4 tablespoons olive oil

Juice of 2 lemons

4 cloves garlic, minced

2 teaspoons dried oregano

1 teaspoon fresh rosemary, finely chopped

Salt and black pepper to taste

1 cup cherry tomatoes, halved

1 small red onion, sliced

1 cup Kalamata olives, pitted

Fresh parsley, for garnish

Lemon wedges, for serving

Instructions
 

Marinate the Fish: In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, fresh rosemary, salt, and pepper. Whisk until well blended. Place the fish fillets in a shallow dish or a resealable plastic bag and pour the marinade over them. Ensure the fish is evenly coated. Cover or seal and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

    Preheat the Grill: While the fish marinates, preheat your grill to medium-high heat. If using a charcoal grill, ensure that the coals are even and glowing.

      Prepare the Vegetables: In a separate bowl, combine the cherry tomatoes, sliced red onion, and Kalamata olives. Drizzle with a bit of olive oil, and season with salt and pepper. Toss to combine.

        Grill the Fish: Remove the fish from the marinade, allowing excess to drip off. Place the fillets skin-side down on the hot grill. Grill for about 4–5 minutes on each side, depending on thickness, or until the fish easily flakes with a fork and has nice grill marks.

          Grill the Vegetables: During the last few minutes of the fish cooking, place the vegetables in a grill basket or wrap them in aluminum foil. Grill them alongside the fish for about 5–7 minutes, or until they are tender and slightly charred.

            Serve: Once the fish and vegetables are grilled, transfer them to a serving platter. Garnish the fish with fresh parsley and serve with lemon wedges on the side for squeezing over before eating.
