3 medium ripe tomatoes, diced

1 large cucumber, peeled and diced

1 bell pepper (red or yellow), diced

1 small red onion, thinly sliced

1 cup Kalamata olives, pitted

1 cup crumbled feta cheese

1/2 cup extra virgin olive oil

1/4 cup red wine vinegar

1 teaspoon dried oregano

Salt and black pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

In a large bowl, combine the diced tomatoes, cucumber, bell pepper, red onion, and Kalamata olives.

    In a separate mixing bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined. This mixture will serve as your dressing.

      Pour the dressing over the vegetable mixture and toss gently to ensure all the ingredients are evenly coated.

        Add the crumbled feta cheese on top of the salad, and toss lightly to incorporate.

          Let the salad sit for about 10-15 minutes before serving to allow the flavors to meld.
