2 cups cooked chicken breast, shredded (preferably grilled or rotisserie)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, thinly sliced

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon dried oregano

Salt and pepper to taste

Lemon wedges (for serving)

Prepare the Chicken: If using cooked chicken, shred it into bite-sized pieces. If you need to cook it, season the chicken breasts with salt, pepper, and a teaspoon of oregano. Grill or bake at 375°F (190°C) for 20-25 minutes or until fully cooked. Allow to cool before shredding.

    Chop the Vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, and red onion.

      Add the Olives and Feta: Toss in the Kalamata olives and feta cheese into the vegetable mix.

        Mix the Chicken: Add the shredded chicken to the bowl and gently fold everything together to combine evenly.

          Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, remaining oregano, salt, and pepper until well combined.
