1 ½ lbs boneless, skinless chicken thighs

4 cloves garlic, minced

2 tsp dried oregano

1 tsp ground cumin

1 tsp ground coriander

¼ cup olive oil

2 tbsp red wine vinegar

Salt and black pepper, to taste

4 pita breads

Sliced tomatoes, cucumber, and red onions (for garnish)

Fresh parsley, chopped (for garnish)

For the Tzatziki Sauce:

1 cup Greek yogurt

1 medium cucumber, grated and drained

2 cloves garlic, minced

1 tbsp olive oil

1 tbsp red wine vinegar

1 tsp dried dill

Salt and black pepper, to taste

Marinate the Chicken:

    - In a bowl, combine the minced garlic, oregano, cumin, coriander, olive oil, red wine vinegar, salt, and pepper.

      - Add the chicken thighs, ensuring they are coated in the marinade. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

        Prepare the Tzatziki:

          - In another bowl, mix the Greek yogurt, grated cucumber (ensure it is well-drained), minced garlic, olive oil, red wine vinegar, dill, salt, and pepper.

            - Stir until well combined, then cover and refrigerate for at least 30 minutes to allow the flavors to meld.

              Cook the Chicken:

                - Preheat a grill pan or an outdoor grill over medium-high heat.

                  - Remove the chicken from the marinade, allowing excess marinade to drip off.

                    - Grill the chicken for about 5-7 minutes per side, or until cooked through and internal temperature reaches 165°F (75°C).

                      - Allow the chicken to rest for a few minutes before slicing it into strips.

                        Assemble the Gyros:

                          - Warm the pita breads on the grill or in a skillet for about 1 minute on each side.
