Grandma's Christmas Candy

Ingredients
  

2 cups granulated sugar

1 cup light corn syrup

1/2 cup unsalted butter

1 teaspoon vanilla extract

1/2 teaspoon almond extract

3 cups unsalted mixed nuts (almonds, walnuts, pecans)

2 cups semi-sweet chocolate chips

1 cup confectioners' sugar (for dusting)

Pinch of salt

Prepare the baking sheet: Line a 9x13 inch baking dish with parchment paper and lightly grease it with butter.

    Cook the sugar mixture: In a large saucepan over medium heat, combine granulated sugar, corn syrup, butter, and a pinch of salt. Stir continuously until the mixture reaches a boil. Once boiling, stop stirring and let it cook until the mixture reaches a soft ball stage (about 240°F or 115°C on a candy thermometer).

      Add flavors: Remove the saucepan from the heat. Carefully stir in the vanilla and almond extracts, mixing well.

        Incorporate nuts: Fold in the mixed nuts until well coated with the sugar mixture.

          Pour into the pan: Immediately pour the nut mixture into the prepared baking dish, spreading it evenly using a spatula. Allow it to cool at room temperature for about 30 minutes until it sets.

            Melt chocolate: In a microwave-safe bowl, heat the chocolate chips in 30-second intervals, stirring in between, until melted and smooth.

              Coat the candy: Once the nut mixture is set, cut it into squares or bars of your desired size. Dip each piece into the melted chocolate, allowing excess to drip off.

                Dust with confectioners' sugar: While the chocolate is still soft, sprinkle confectioners' sugar over the coated pieces to give them a festive touch.

                  Let it set: Place the candies on a wire rack to allow the chocolate to harden completely.

                    Store: Once the chocolate is set, store the candies in an airtight container. They can be enjoyed right away or saved for Christmas festivities!
