1 lb beef tenderloin, trimmed

Salt and black pepper, to taste

2 tbsp olive oil

1 French baguette, sliced into 1/2-inch rounds

1 cup arugula, washed and dried

1/2 cup cherry tomatoes, halved

3/4 cup heavy cream

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

1 tbsp balsamic glaze (for drizzling)

Optional: Fresh parsley, for garnish

Instructions
 

Prepare the Beef Tenderloin:

    - Season the beef tenderloin generously with salt and black pepper.

      Sear the Beef:

        - Heat olive oil in a skillet over medium-high heat. Add the tenderloin and sear on all sides until browned (about 3-4 minutes per side).

          - Cook until desired doneness (125°F for medium-rare). Remove from heat, wrap in foil, and let it rest for 10 minutes.

            Toast the Crostini:

              - Preheat the oven to 400°F (200°C). Arrange baguette slices on a baking sheet. Brush lightly with olive oil and season with a pinch of salt.

                - Toast in the oven for 5-7 minutes until golden brown and crispy. Remove and let cool slightly.

                  Make the Creamy Parmesan Sauce:

                    - In a small saucepan, combine heavy cream, garlic, and thyme over medium heat. Bring to a simmer, stirring occasionally.

                      - Once simmering, reduce heat to low and whisk in the grated Parmesan cheese until smooth and creamy. Season with salt and pepper to taste.

                        Assemble the Crostini:

                          - Thinly slice the rested beef tenderloin. Place a slice of beef on each toasted baguette.
