Gooey Cinnamon Apple Crumble Muffins

Ingredients
  

For the Muffins:

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1 cup milk

2 large eggs

2 cups fresh apples, peeled and diced (about 2 medium apples)

1 teaspoon vanilla extract

For the Crumble Topping:

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/4 cup unsalted butter, cold and cubed

1/2 cup oats (old-fashioned or quick oats)

For the Gooey Center:

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

Instructions
 

Prepare the Gooey Center: In a small bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until smooth. Set aside in the fridge to chill while you prepare the muffins.

    Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.

      Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt until well combined.

        Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla extract until smooth.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently just until combined. Do not overmix! Fold in the diced apples.

            Prepare the Crumble Topping: In a medium bowl, combine the flour, brown sugar, and cinnamon. Add the cold, cubed butter and mix with a fork or your fingers until the mixture resembles coarse crumbs. Stir in the oats and mix until just combined.

              Assemble the Muffins: Fill each muffin cup halfway with the muffin batter. Add one teaspoon of the cream cheese filling in the center of each muffin, then cover with more muffin batter until the cups are about 3/4 full. Top each muffin with a generous sprinkle of the crumble topping.

                Bake the Muffins: Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the muffin part comes out clean (it’s okay if some cream cheese is on the toothpick).

                  Cool and Serve: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature for a delicious treat!
