Golden Cheesy Mashed Potato Puffs - A Flavorful Twist

Ingredients
  

2 cups mashed potatoes (leftover or freshly made)

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

2 large eggs

1/2 cup breadcrumbs (plus extra for coating)

1/4 cup chopped green onions (optional)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Olive oil or cooking spray (for greasing)

Instructions
 

Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with olive oil or cooking spray.

    In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, breadcrumbs, garlic powder, onion powder, and chopped green onions. Season with salt and pepper.

      Mix the ingredients until well combined. The mixture should be thick enough to hold its shape.

        Using a spoon or your hands, scoop out portions of the mixture and shape them into small balls or puffs, about 1-2 inches in diameter. Roll each puff in breadcrumbs to coat.

          Place the coated puffs on the prepared baking sheet, making sure they are spaced apart.

            Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.

              Remove from the oven and let cool for a few minutes before serving. These puffs are delicious served warm with a side of your favorite dipping sauce!
