2 ¼ cups all-purpose flour

1 teaspoon baking soda

1 tablespoon ground ginger

1 tablespoon ground cinnamon

½ teaspoon ground cloves

½ teaspoon salt

¾ cup unsalted butter, softened

1 cup brown sugar, packed

¼ cup unsulfured molasses

1 large egg

1 teaspoon vanilla extract

½ cup granulated sugar (for rolling)

For the Eggnog Frosting:

1/2 cup unsalted butter, softened

2-3 cups powdered sugar (to taste)

1/4 cup eggnog

1 teaspoon vanilla extract

1/4 teaspoon ground nutmeg (optional, for garnish)

Instructions
 

Prepare the Ginger Molasses Cookies:

    - Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

      - In a medium bowl, whisk together the flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt. Set aside.

        - In a large mixing bowl, cream the softened butter and brown sugar together until fluffy, about 3-4 minutes.

          - Mix in the molasses, egg, and vanilla extract until well combined.

            - Gradually add the flour mixture to the wet ingredients, mixing until just combined.

              - Scoop tablespoon-sized amounts of dough and roll them in granulated sugar. Place them about 2 inches apart on the prepared baking sheets.

                Bake the Cookies:

                  - Bake for 8-10 minutes or until the edges are set and the centers are slightly soft. Let them cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.

                    Make the Eggnog Frosting:

                      - In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the eggnog and mixing until fluffy. Add the vanilla extract and nutmeg if using, and mix until smooth.

                        Assemble the Sandwich Cookies:

                          - Once the cookies have cooled completely, spread a generous amount of eggnog frosting on the flat side of one cookie, then top with another cookie to form a sandwich. Press gently to spread the frosting evenly.
