Ingredients
  

4 medium-sized russet potatoes, peeled and diced

1 large onion, finely chopped

2 cloves garlic, minced

3 cups vegetable or chicken broth

1 cup heavy cream

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the diced potatoes, dried thyme, smoked paprika, salt, and pepper. Stir to combine.

        Pour in the vegetable or chicken broth; bring to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.

          Once the potatoes are cooked, use an immersion blender to puree the soup until smooth, or transfer to a blender in batches and blend until creamy.

            Return the soup to the pot (if using a blender) and stir in the heavy cream. Simmer for an additional 5 minutes to heat through.

              Taste and adjust the seasoning as necessary before serving.

                Ladle the soup into bowls and garnish with chopped green onions and fresh parsley.
