4 medium-sized russet potatoes, peeled and grated

1 small onion, finely chopped

2 large eggs

1/4 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped (optional)

Vegetable oil for frying

Sour cream or applesauce for serving

Instructions
 

Start by placing the grated potatoes in a clean kitchen towel. Twist the towel to squeeze out as much excess moisture as possible. This step ensures your pancakes will be crispy!

    In a large mixing bowl, combine the grated potatoes, chopped onion, eggs, flour, baking powder, salt, black pepper, and parsley (if using). Mix well until all ingredients are thoroughly combined.

      Heat a generous amount of vegetable oil in a large skillet over medium-high heat. The oil should be hot enough that a small drop of the batter sizzles when added.

        Using a spoon or a 1/4 cup measuring cup, drop the potato mixture into the hot oil, flattening each mound slightly with the back of the spoon to form pancakes. Cook in batches to avoid overcrowding the pan.

          Fry the pancakes for about 3-4 minutes on each side until they are golden brown and crispy. Adjust the heat as needed to prevent burning.

            Once cooked, transfer the pancakes to a plate lined with paper towels to drain excess oil.
