Ingredients

1 cup unsalted butter, softened

1 cup finely chopped pecans, toasted

3 cups all-purpose flour

1 cup powdered sugar, plus extra for dusting

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: A pinch of cinnamon for added warmth

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, cream together the softened butter and 1 cup of powdered sugar until light and fluffy.

Stir in the vanilla extract and salt (and cinnamon if using) until combined.

Gradually mix in the flour until the dough comes together smoothly.

Gently fold in the toasted pecans, ensuring they are evenly distributed throughout the dough.

Scoop tablespoon-sized amounts of dough and roll them into small balls (about 1 inch in diameter) and place them on the prepared baking sheet, spacing them about 2 inches apart.

Bake in the preheated oven for 15-20 minutes or until the bottoms are lightly golden. The tops should remain pale.

Allow the butterballs to cool on the baking sheet for about 10 minutes before transferring them to a wire rack.

While the cookies are still warm, sprinkle them generously with powdered sugar for a beautiful finish.

Allow them to cool completely before serving or storing.
