Ingredients

1 pound of fresh green beans, trimmed

4 cloves of garlic, finely minced

3 tablespoons olive oil

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

¼ teaspoon red pepper flakes (optional)

Juice of ½ lemon

Zest of 1 lemon

2 tablespoons grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Green Beans: Rinse the green beans under cold water and pat them dry with a paper towel. Trim the ends off.

Mix Ingredients: In a large bowl, combine the trimmed green beans, minced garlic, olive oil, kosher salt, black pepper, and red pepper flakes (if using). Toss everything together until the green beans are well coated.

Arrange on Baking Sheet: Spread the green beans in a single layer on a large baking sheet, making sure not to overcrowd them.

Roast: Place the baking sheet in the preheated oven and roast the green beans for 15-20 minutes, shaking the pan halfway through for even cooking. The beans should be tender and slightly crispy at the ends.

Add Lemon and Cheese: Once roasted, remove from the oven and immediately squeeze the lemon juice over the green beans, add the lemon zest, and toss to combine. If desired, sprinkle with grated Parmesan cheese while they are still hot.

Serve: Transfer the roasted green beans to a serving platter, garnish with fresh parsley, and serve immediately as a delicious side dish.
