4 cups all-purpose flour

2 teaspoons active dry yeast

1 teaspoon sugar

1 ½ cups warm water (110°F to 115°F)

½ cup extra virgin olive oil (divided)

2 teaspoons salt

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

4 cloves garlic, minced

½ cup grated Parmesan cheese

1 teaspoon flaky sea salt (for topping)

Optional: Fresh parsley for garnish

Activate the Yeast: In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes, until foamy.

    Mix the Ingredients: In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and ¼ cup of olive oil. Stir until a shaggy dough forms.

      Knead the Dough: Transfer the dough onto a floured surface. Knead for about 5-7 minutes until it becomes smooth and elastic. You can also use a stand mixer with a dough hook for this step.

        First Rise: Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for 1-2 hours, or until it has doubled in size.

          Prepare the Pan: Generously grease a 13x18 inch baking sheet with 2 tablespoons of olive oil.

            Shape the Dough: Once the dough has risen, punch it down to release the air. Transfer it to the prepared baking sheet and stretch it out to fit the pan. If the dough resists stretching, let it rest for 10 minutes and try again.

              Add Toppings: In a small bowl, mix the minced garlic, chopped rosemary, and remaining olive oil. Brush this mixture over the surface of the dough. Evenly sprinkle the grated Parmesan cheese on top, and finally, sprinkle with flaky sea salt.

                Second Rise: Cover the dough again and let it rise for about 30-45 minutes, until it puffs up slightly.

                  Preheat the Oven: While the dough is rising, preheat your oven to 450°F (230°C).

                    Dimple the Dough: Once the dough has risen, use your fingers to make dimples all over the surface of the dough, creating little pools for the toppings.

                      Bake the Focaccia: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the focaccia is golden brown and crusty.

                        Cool and Serve: Remove the focaccia from the oven and let it cool on a wire rack for about 10 minutes. Slice into squares and serve warm, garnished with fresh parsley if desired.
