Garlic Parmesan Chicken Pasta Bake

Ingredients
  

2 cups rotini pasta

2 cups cooked chicken, shredded (can use rotisserie chicken)

3 cups spinach (fresh or frozen, thawed and drained)

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 tsp Italian seasoning

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of boiling salted water, cook the rotini pasta according to package directions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. If using fresh spinach, add it now and cook until wilted. If using frozen, add it after thawing and draining.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta, shredded chicken, sautéed spinach and garlic, cherry tomatoes, heavy cream, chicken broth, Italian seasoning, half of the Parmesan, and season with salt and pepper to taste. Mix well until combined.

          Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish. Spread it evenly.

            Top with Cheeses: Sprinkle the remaining Parmesan cheese and the mozzarella cheese evenly over the top.

              Bake: Place the baking dish in the preheated oven. Bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Once finished, remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
