1 lb large sea scallops

4 tablespoons unsalted butter

3 cloves garlic, minced

Zest and juice of 1 lemon

1 tablespoon olive oil

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Scallops: Pat the scallops dry with paper towels. This is crucial for achieving a good sear. Season both sides with salt and black pepper.

    Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

      Sear the Scallops: Carefully add the scallops to the hot pan, making sure not to overcrowd them. Sear for about 2-3 minutes without moving them until a golden crust forms. Flip the scallops and sear the other side for an additional 2-3 minutes until they are opaque in the center. Remove the scallops from the skillet and set aside.
