2 pounds fresh mussels, cleaned and debearded

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Juice of 1 lemon (about 2 tablespoons)

Zest of 1 lemon

1 cup dry white wine (like Sauvignon Blanc)

1/4 cup fresh parsley, chopped

Salt and black pepper to taste

Crusty bread, for serving

Prepare the Mussels: Rinse the mussels under cold water, scrubbing the shells with a brush to remove any debris. Discard any mussels that are open and do not close when tapped.

    Melt the Butter: In a large pot over medium heat, add the unsalted butter. Allow it to melt slowly, then add the minced garlic and red pepper flakes. Sauté for 2-3 minutes until the garlic is fragrant but not browned.

      Deglaze with Wine: Pour in the dry white wine, and increase the heat to medium-high. Bring the mixture to a gentle simmer, scraping the bottom of the pot to release any flavorful bits.

        Add the Mussels: Once the wine is simmering, add the cleaned mussels to the pot. Cover with a lid and cook for about 5-7 minutes, shaking the pot occasionally. The mussels are done when they have opened up.

          Add Lemon and Season: Once the mussels are cooked, turn off the heat. Squeeze in the lemon juice, add the lemon zest, and sprinkle with the chopped parsley. Season with salt and black pepper to taste.
