1 pound sirloin steak, cut into 1-inch cubes

1 pound baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prep the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook until tender, about 15-20 minutes. Drain and set aside.

    Sear the Steak: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the steak cubes with salt and pepper. Once the oil is hot, add the steak bites in a single layer, being careful not to overcrowd the pan. Sear for about 2-3 minutes on each side until they are browned but still medium-rare in the middle. Remove the steak from the skillet and set aside.

      Make the Garlic Butter: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic, dried thyme, and dried rosemary. Sauté for about 1-2 minutes until the garlic is fragrant.

        Combine Ingredients: Add the cooked baby potatoes to the skillet with the garlic butter mixture. Toss them gently in the garlic butter to coat evenly and heat through for about 3-4 minutes.

          Add the Steak: Return the seared steak bites to the skillet with the potatoes. Toss everything together for about 1-2 minutes to combine the flavors.

            Serve: Garnish with fresh chopped parsley before serving.
