1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.

    Season the steak: In a bowl, toss the steak cubes with salt, pepper, and paprika. Ensure each piece is well-coated.

      Sear the steak: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, add the seasoned steak cubes in a single layer (you may need to do this in batches). Sear for 2-3 minutes per side for medium-rare or until desired doneness. Remove the steak bites from the skillet and set aside on a plate.

        Cook the potatoes: In the same skillet, add the drained potatoes. Sauté for about 5-7 minutes until crispy and golden brown, stirring occasionally.

          Make the garlic butter: In the same skillet, lower the heat to medium. Add the butter, minced garlic, rosemary, and thyme. Cook for about 1-2 minutes, or until the garlic is fragrant and just starting to turn golden.

            Combine and sauté: Return the steak bites back to the skillet, gently tossing to coat them in the garlic butter. Allow everything to cook together for another 2-3 minutes for flavors to meld.
