1 lb (450g) sirloin steak, cut into 1-inch cubes

2 cups baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Ingredients: Start by washing and halving the baby potatoes. Cut the steak into 1-inch cubes and season generously with salt and pepper.

    Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the halved baby potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender. Remove the potatoes from the skillet and set aside.

      Sear the Steak: In the same skillet, increase the heat to medium-high. Add the cubed steak in a single layer, searing for about 3-4 minutes on each side until browned. Avoid overcrowding the pan; you might need to do this in batches.

        Add Garlic and Herbs: Once the steak is cooked to your liking, reduce the heat to medium, and add the minced garlic, rosemary, and thyme to the skillet. Stir for about 1 minute until fragrant.

          Create the Garlic Butter: Push the steak and garlic to one side of the skillet. In the empty space, add the butter. Let it melt and combine with the garlic and herbs, mixing everything together.

            Combine and Finish: Add the cooked potatoes back into the skillet, tossing everything together to ensure the potatoes are coated in the garlic butter. Cook for an additional 2-3 minutes, allowing the flavors to meld.
