1 lb (450g) sirloin steak, cut into bite-sized pieces

1 lb (450g) baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Boil the Potatoes: Start by bringing a medium pot of salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.

    Cook the Steak: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the steak pieces with salt and pepper. Add steak to the skillet in a single layer, cooking for about 2-3 minutes on each side until browned. Remove from the skillet and set aside.

      Sauté the Potatoes: In the same skillet, add the remaining tablespoon of olive oil. Add the drained potatoes and sauté for about 5-6 minutes until they are golden brown.

        Add Garlic and Herbs: Push the potatoes to one side of the skillet, lower the heat to medium, and add the butter, minced garlic, rosemary, and thyme. Stir the garlic into the butter until fragrant, about 1 minute.

          Combine: Return the steak to the skillet and mix everything together, allowing the flavors to meld for another 2-3 minutes. Taste and adjust seasoning if needed.
