Ingredients

9-12 lasagna noodles (oven-ready or regular, cooked as per package instructions)

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (or chicken broth)

Juice of 1 lemon

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese, plus more for topping

1 1/2 cups ricotta cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Shrimp: In a large skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes until the shrimp turn pink, then remove them from the skillet and set aside.

Make the Sauce: In the same skillet, pour in the white wine (or chicken broth) and lemon juice. Bring to a simmer and let it reduce by half, about 3-4 minutes. Stir in the heavy cream and Parmesan cheese, mixing well until smooth. Allow it to simmer for another 2-3 minutes until slightly thickened.

Assemble the Lasagna: Preheat your oven to 375°F (190°C). In a greased 9x13 inch baking dish, spread a layer of the creamy garlic butter sauce on the bottom. Place a layer of lasagna noodles over the sauce. Spread half of the ricotta cheese on top, followed by half of the shrimp and another layer of sauce.

Repeat Layers: Add another layer of noodles, the remaining ricotta, the remaining shrimp, and half of the mozzarella. Pour more sauce over the top, followed by a final layer of remaining lasagna noodles. Top with the remaining sauce and mozzarella cheese. Sprinkle additional Parmesan cheese on top.

Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, until the cheese is golden and bubbly.

Serve: Allow the lasagna to cool for about 10 minutes before slicing. Garnish with fresh parsley and serve warm.
