1 lb Italian sausage (mild or spicy, your choice)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

½ teaspoon dried oregano

Salt and pepper to taste

8 oz pasta of your choice (fettuccine or penne recommended)

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley (for garnish)

Zest of 1 lemon

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Sausage Bites: While the pasta cooks, remove the sausage from its casing and cut into bite-sized pieces.

      Sauté the Sausage: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sausage bites and cook them until browned and cooked through, about 6-8 minutes. Remove the sausage from the skillet and set aside.

        Make Garlic Butter: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant but not browned.

          Combine Ingredients: Add the cooked sausage back to the skillet. Sprinkle with dried oregano, salt, and pepper to taste. Mix well.

            Create Creamy Sauce: Lower the heat and add the heavy cream to the skillet, stirring constantly for about 2 minutes until heated through. Slowly mix in the grated Parmesan cheese until melted and creamy.

              Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing everything together to coat the pasta in the creamy sauce. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

                Finish and Serve: Stir in lemon zest and fresh parsley for brightness. Serve the garlic butter sausage bites over the creamy Parmesan pasta, garnishing with additional parsley and Parmesan if desired.
