4 medium-sized russet or Yukon gold potatoes

6 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

1 teaspoon paprika

Salt and freshly ground black pepper, to taste

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Rinse and scrub the potatoes thoroughly to remove any dirt. Pat them dry with a paper towel. Make sure to leave the skins on for added texture and flavor.

      Create Hasselback Cuts: Place each potato on a cutting board. To make the Hasselback cuts, place two chopsticks or wooden spoons on either side of the potato. Using a sharp knife, make thin, even slices across the potato, cutting down until the knife hits the chopsticks. This will prevent you from cutting all the way through. Aim for about 1/8 inch apart between cuts.

        Make the Garlic Butter: In a small bowl, mix the melted butter, minced garlic, thyme, rosemary, paprika, salt, and black pepper until well combined.

          Brush the Potatoes: Place the potatoes on a lined baking sheet. Carefully brush the garlic butter mixture between the cuts of the potatoes, allowing the butter to seep into them. Make sure to reserve some of the mixture for later.

            Bake the Potatoes: Bake the potatoes in the preheated oven for about 50-60 minutes, depending on their size. After the first 30 minutes, brush the remaining garlic butter mixture on top, ensuring the slices are well coated.

              Add Cheese (Optional): If you're using Parmesan cheese, sprinkle it over the potatoes during the last 10 minutes of baking for a delicious melty topping.

                Garnish and Serve: Once the potatoes are golden and crispy on the edges, remove them from the oven. Let them cool for a few minutes, then sprinkle with fresh parsley for a pop of color. Serve hot as a side dish or a stunning appetizer!
